Cut to a thickness of 1.5", each boneless ribeye will end up between 16-20oz - enough for one enterprising or two average eaters. **Please select how many côte de boeuf you’d like below. 1 = 1 steak.** What says romance like an enormous ribeye to share? A côte de boeuf (aka cowboy steak, or a tomahawk without the long bone) is a 2.5-3" cut of bone-in ribeye that usually weighs in at about 2-3lbs (aka plenty for two to share, likely with some leftovers). Sourced from McEnroe Organics and our friends at Happy Valley Meats. As with everything, there’s some weight variability between steaks; if you’d like one on the larger or smaller side, let us know in the “Notes” section at checkout.

The prime rib of lamb, the rack of lamb is visually dramatic, tender and flavorful. Each half rack is comprised of four chops and comes trimmed, not frenched. If you'd like yours frenched, please let us know in the "Notes" section at checkout. You can generally budget for 2-3 chops per person. Select below how many half racks of lamb would you like (4 chops).

**Select how many pounds of tenderloin you'd like. 1 = 1lb, 2 = 2lbs, etc.** You may also know it as filet or chateaubriand, but we know it as the most tender, lean muscle on the entire cow. All orders (unless otherwise specified) will come trimmed and tied. Please keep in mind that a whole tenderloin weighs 3.25-4lbs; orders larger than this will be in two pieces.
