Whole Turkeys
Pastured Turkey (Uncooked)
This is the classic option. Think your typical supermarket turkey, but way way better. Like the overwhelming majority of turkeys eaten for Thanksgiving, these are ‘Broad-Breasted Whites’ – a breed developed in the 1950’s (or thereabouts) and favoured for its mild flavour, ample white meat, and more forgiving cook. That’s where the similarities end though. We source these turkeys from McEnroe Farm (who also raises beef for us), where they’ve been raised on beautiful pasture in Amenia, NY. Never given anti-biotics, never given hormones, but absolutely given a lot of love and care and room to strut around and eat bugs and seeds to their hearts content. As a result, these turkeys have a much better flavour than your average bird, while still retaining the abundant white meat that they’re named after. So if you want that classic turkey and are a white meat lover, this is your guy.

Heritage Turkey (Uncooked)
A common refrain we hear at the shop is “I don’t even like turkey” – if this is you, you owe it to yourself and our feathered friends to give a heritage turkey a try before you beg off completely. ‘Heritage’ here refers to the breed (in this case, Black Spanish) – ie, breeds of livestock that were developed before industrial farming where flavour was prized over rapid (and often medically damaging) rate of growth. As a result, these turkeys have a pronounced, full flavour (not gamey, but quite rich). Even the breasts are of darker meat than their conventional-breed counterparts. Same with all of the meat we carry, these turks have been raised locally on pasture – namely Double Brook Farm in Hopewell, NJ, and never given any antibiotics or hormones. Heritage turkeys can be a little less forgiving to cook (since they’re often a little leaner and more prone to drying out) but it’s not like you need a culinary degree to get a delicious result. So if you want a turkey that’s big on flavour, this is your guy.

Don't feel like cooking a turkey this year? Let us do the work for you. Dry-brined for two days and slow cooked in duck fat, each confit turkey leg is tender and delicious. Just gently re-heat and sear the skin. Each leg feeds 2 people.

What if I want to pre-order an item not listed here?
Looking for a pork shoulder, rib roast, short ribs, or another item you don't see on this menu? Please stop in or call your local shop: (347) 763 9500 for our Prospect Heights location and (347) 392 3761 for our Greenpoint store. They'll coach you through any questions and take down your information in person or over the phone.
What if I want my turkey spatchcocked, my crown butterflied, or have any special requests for my order?
Happy to oblige! There's a "Notes" section at checkout; let us know what you'd like done and we'll make it a priority.
What if I need to pick up my items prior to Saturday 11/21?
If you need a turkey before Saturday, November 21st, please email rebecca@prospectbutcher.co with your desired turkey size and pickup date. Unfortunately, we won't be able to supply our heritage or pasture-raised turkeys before the 21st, but we can source other local, free-range turkeys for you. With enough notice, we can most likely accommodate early pickups for turkey parts and some other poultry items; again, please email rebecca@prospectbutcher.co with your order information and desired pickup date.
What if I need to change my order?
Stuff happens! If you need to increase or decrease your order size (subject to availability), change your pickup date, or cancel your order, please email team@prospectbutcher.co. Unfortunately, we won't be able to make changes over the phone.
What if I can't remember my order or pickup date?
Each customer will receive a confirmation email with their full order and pickup date as soon as their order is complete. If you don't see it, please check your spam folder! You'll also receive pickup instructions and an order reminder the day before your selected pickup date.
What if I want to add extra items to my order?
If you know that you're also going to need a pound of chorizo, a pint of duck fat, or another item that we regularly stock but don't have listed here, you can request it in the "Notes" section. That said, some items will be on a first-come first-serve basis; if you add something that we're unable to guarantee, we'll let you know. Otherwise, all order change requests can be submitted to team@prospectbutcher.co.
