Turkeys

Pastured Turkey
This is the classic option. Think your typical supermarket turkey, but way way better. Like the overwhelming majority of turkeys eaten for Thanksgiving, these are ‘Broad-Breasted Whites’ – a breed developed in the 1950’s (or thereabouts) and favoured for its mild flavour, ample white meat, and more forgiving cook. That’s where the similarities end though. We source these turkeys from McEnroe Farm (who also raises beef for us), where they’ve been raised on beautiful pasture in Amenia, NY. Never given anti-biotics, never given hormones, but absolutely given a lot of love and care and room to strut around and eat bugs and seeds to their hearts content. As a result, these turkeys have a much better flavour than your average bird, while still retaining the abundant white meat that they’re named after. So if you want that classic turkey and are a white meat lover, this is your guy.

Heritage Turkey
A common refrain we hear at the shop is “I don’t even like turkey” – if this is you, you owe it to yourself and our feathered friends to give a heritage turkey a try before you beg off completely. ‘Heritage’ here refers to the breed (in this case, Black Spanish) – ie, breeds of livestock that were developed before industrial farming where flavour was prized over rapid (and often medically damaging) rate of growth. As a result, these turkeys have a pronounced, full flavour (not gamey, but quite rich). Even the breasts are of darker meat than their conventional-breed counterparts. Same with all of the meat we carry, these turks have been raised locally on pasture – namely Double Brook Farm in Hopewell, NJ, and never given any antibiotics or hormones. Heritage turkeys can be a little less forgiving to cook (since they’re often a little leaner and more prone to drying out) but it’s not like you need a culinary degree to get a delicious result. So if you want a turkey that’s big on flavour, this is your guy.
