Free of hormones and antibiotics, these cows are completely pasture raised in NY, NJ, and PA. A whole, trimmed brisket is generally around 10-12lbs; if you select a size larger than that, it will come in two pieces. Please specify in the "Notes" section at the bottom of this form whether you'd like the fattier (second cut/point) or leaner (first cut/flat) end of the brisket. If, for example, you need 14 lbs of second cut brisket, please select "14" from the options below and tell us in the "Notes" section that you'd like two, roughly similar size points.

Our capons are farm-raised in Pennsylvania. These castrated male chickens grow beyond the size of your standard chicken while maintaining their tenderness and an even more pronounced flavor. Each capon weighs 6-8lbs.

Our fresh whole chickens are free range, air chilled, and free of hormones and antibiotics. Raised in Pennsylvania, these whole chickens are generally 3.5-4lbs and come trussed. Please let us know in the "Notes" section at checkout if you'd like your chicken broken down or spatchcocked.

While tradition calls for a lamb shank bone, a lamb only has so many (four) shanks. The next best thing: a lamb rib bone, fresh from our whole Gibson Family Farm lambs. Select how many lamb bones you'd like below: 1 = 1 bone.
